Garlic Prawns, goats cheese with a lemon dressing (2 people).

Garlic Prawns, goats cheese with a lemon dressing (2 people).
You will need: 3 finely chopped garlic cloves, ½ tsp cornflour, half finely chopped and deseeded mild green chilli, 1tsp honey, 30ml olive oil, 6 tiger prawns, 1 lemon, 10ml white wine vinegar, 1tsp caster sugar, 2 basil leaves, 100g goats cheese, 1 green apple, a handful of pea tops.
Prepare in advance: De-shell 6 tiger prawns (leaving the tail) and remove the vein along the back. Wash the prawns thoroughly.
Make a corn starch paste by mixing ½ tsp cornflour and 1tbs water.
Core the apple, then cut ½ of the apple into 16 pieces.
To make the lemon dressing, add the juice of 1 lemon into a pan and bring to a simmer, then turn off the heat and add 20ml olive oil, 10ml white wine vinegar, 1tsp caster sugar and 2 very finely chopped basil leaves.
In a frying pan, add 10ml olive oil and when hot, add 3 finely chopped garlic cloves and half a finely chopped and deseeded mild green chilli. After 20 seconds, add the prawns. Turn when the underside is pink. After 30 seconds, add the cornstarch paste and 1tsp honey. 30 seconds later, turn off the heat. Mix round and try to coat all the prawns evenly.
To serve, scatter a few pea tops around the plate, place 4 thin slices of apple in the middle, a few pieces of the goats cheese and place the garlic prawns on top. Drizzle 2 – 3 tsp of lemon sauce around the pea tops.
